As summer heats up I hope teachers are hip-deep in their bliss right now. For everyone else who has to work this summer, try this easy recipe to keep yourself cool:

Cucumber “Ceviche”


1 cucumber chopped into small chunks

a handful of cilantro chopped into little bits

1 avocado cut into small chunks

Sea salt, lemon, extra virgin olive oil


Combine cucumber, avocado, and cilantro in a large bowl. Add the juice of half a lemon, 2 tablespoons of olive oil and a pinch of sea salt. Mix. Enjoy.
